Regent Seven Seas Cruises Regent's "Signatures" is the only restaurant at sea to be created and operated by chefs wearing the white toque and blue riband of the Cordon Bleu of Paris, the most prestigious culinary authority in the world. The ambience is classically and elegantly French, of course, and the treasured cooking techniques are those handed down by generations of Cordon Bleu chefs, but the cuisine is far from traditional - a marvelous mixture of culinary delights as inventive and eclectic as tomorrow.


"Seven Seas Mariner": It is almost axiomatic that a ship of the caliber of the Mariner would offer outstanding dining. After all, superb cuisine has been a hallmark of the Regent Seven Seas fleet since its founding. More unusual on the Mariner is the number of different dining venues available to our guests - there are four separate restaurants (including our exclusive Cordon Bleu Restaurant - Signatures) plus a poolside grill bar, making the choice of each night's dining destination a most pleasant quandary. But what is notably unique on the Mariner is the fact that it is the largest ship afloat to offer single open- seating dining in every one of her four restaurants. Which means our guests may sit with whomever they please, and they may dine whenever and wherever they wish, even in their suite, where selections from the ship's main restaurant can be ordered during dining hours and a 24-hour room service menu is also available.


"Seven Seas Navigator": Creating a great dining establishment is no simple task. First, it takes the imagination and creativity of an inspired chef. Add to this a serene setting elegantly designed to welcome diners with an ambience of taste and comfort. And finally, it requires the perseverance, knowledge and tender loving care of a maitre d' and staff who are totally committed to offering only the best to their appreciative clientele.
Aboard the Seven Seas Navigator, you will find two such establishments: The Compass Rose Restaurant and Portofino Grill. Our designers and executive chef have meticulously assembled all the essential elements for a superb dining experience. But not content to follow formulas, and being intrepid culinary explorers at heart, they've added a dash of sophisticated fun and more than a soupcon of imagination to create a new recipe for gustatory discoveries.


"Regent Diamond": No matter where you dine on board the Diamond, the cuisine is always six-star. We make our own pastries, breads and pasta daily and stock our wine cellar to please the most discriminating palate. The Grill offers a casual breakfast or luncheon, served indoors or on deck, relaxed affairs with breezes and panoramic seascapes as a backdrop. When the sun sets, The Grill is transformed into a lively trattoria, serving authentic Northern Italian specialties. You'll find the experience is always fun and different as the chef prepares a sumptuous new menu daily for you to savor.
A more formal breakfast or luncheon is served in the Grand Dining Room - one of the most elegant dining salons afloat - surrounding you with graceful columns and sheer-draped windows, Villeroy & Boch china and Schott Zwiesel crystal. Each evening, there is a single, open seating arrangement offering an inspired menu of at least five appetizers, six entrees, three light gourmet specialties and five desserts to tempt you. Wine, with our compliments, is poured at your table. And on several nights, piano accompaniment blends with vast ocean views to highlight the ambiance. For truly intimate dining, you may order from the Grand Dining Room menu during serving hours and have your selections catered to your stateroom. Unhurried open seating allows you to dine when, where and with whom you wish.


"Paul Gauguin": Regent Seven Seas Cruises is delighted to announce a unique arrangement with Chef Jean- Pierre Vigato, a consummate culinary artist whose renowned Apicius restaurant has become one of the best known in Paris. Chef Vigato is of a new generation of great chefs, and his establishment has already earned two coveted Michelin stars. In addition to adhering to traditional French cuisine, one of his fortes is to adopt characteristics of oriental and other ethnic cuisines to create new and innovative dishes. As a special consultant for the Paul Gauguin, M. Vigato will work with our chefs on the overall dining experience, and two of his Apicius menus will be featured six nights per week in the alternate, reservations-only La Venda restaurant.
In addition, menus also feature superb international cuisine, lighter fare including selections for those with special diets, and inventive adaptations of Polynesian specialties, all using the freshest tropical fruits, vegetables, seafood and other ingredients. Fine wines are as integral to dining as food. Excellent wines from the caves of France, California, and other wine-growing domains are poured with our compliments at lunch and dinner. The ship?s cellar also offers an outstanding selection of other superb wines for purchase, and a sommelier is at hand to assist with your personal selections.
