S.A.L.T. stands for "Sea and Land Taste," and it's less a restaurant than a full culinary ecosystem built into the ship. The idea is simple: let the destination cook.

Exploring Silversea's S.A.L.T. Program

S.A.L.T. Kitchen

The centerpiece restaurant, where the menu changes as the ship does. A stop in Portugal might mean alheira, a garlicky sausage with a five-century backstory: legend has it Jewish communities crafted it to look like pork during the Inquisition, hanging it from the rafters to fool inspectors who came looking for exactly that. Every dish on the menu carries a story of the place it came from.

S.A.L.T. Bar

A sophisticated bar features a curved green velvet banquette, a dark marble counter with warm lamp lighting, and a wall of illuminated grid shelving displaying various glass decanters.

Cocktails built around whatever the region has to pour. For one Silver Spirit World Voyage, that meant a signature drink for every single port along the course, 66 ports, 66 cocktails, each built from local spirits and ingredients sourced right where the ship was docked.

S.A.L.T. Lab

A modern culinary lab features a large circular central island surrounded by curved white counters, illuminated shelving, and a multi-tiered circular ceiling with recessed lighting.

A hands-on cooking studio where small groups learn a region's techniques from a S.A.L.T. Lab Host who actually grew up cooking them. It's less demonstration than apprenticeship: guests prepare the dish themselves and leave with a recipe worth repeating at home.

S.A.L.T. Chef's Table

An elegant Chef's Table venue features a horseshoe-shaped marble dining counter with upholstered bar stools facing an open stainless-steel kitchen where chefs prepare meals.

On Silver Nova and Silver Ray, the Lab transforms after dark into something else entirely: an 18-seat counter wrapped around the chefs themselves, one seating a night, built for a menu too ambitious and too personal for the main dining room.

S.A.L.T. Experiences

Shore-based excursions built entirely around food. For example, on a voyage through Portugal, that might mean a hands-on cooking session at a countess's historic estate, learning recipes passed down through her own family. Elsewhere, it might mean a market visit, a vineyard tour, or a cooking session with a local chef, wherever the ship happens to be.

S.A.L.T. Talks

Onboard lectures led by the people who actually know the food. Past speakers have included a cookbook author tracing a culinary path from Mexico to the southern tip of South America, and a chef demonstrating centuries-old South American dishes on a mobile kitchen right in the room.

S.A.L.T. was designed to immerse you in the history behind each dish, such as Kleftiko, a low-and-slow-cooked lamb in a sealed Greek pit, a method traced back to mountain rebels stealthily hiding their cookfires from view.

The whole program is overseen by Adam Sachs, a three-time James Beard Award winner and former editor-in-chief of Saveur, which is part of why the storytelling feels less like a cruise line's marketing copy and more like a documentary about food you get to eat.

Where to Find It

S.A.L.T. began on Silver Dawn and Silver Moon and has been expanding steadily since. Silver Nova joined next, followed by Silver Muse in December 2025 and Silver Spirit in 2026 through a refit that also refreshed the ship's public spaces. Not every element travels to every ship at the same pace: S.A.L.T. Chef's Table, for instance, is currently exclusive to Silver Nova and her sister ship, Silver Ray.

Shore-based S.A.L.T. Experiences have expanded even further, available on sailings across the fleet whether or not a ship has the full onboard Kitchen and Lab setup. In other words: even on a sailing without the dedicated S.A.L.T. venues onboard, there's a good chance the itinerary still includes a S.A.L.T.-branded excursion ashore. Availability continues to expand ship by ship, so it's worth confirming what's included on your specific sailing when you book.

S.A.L.T. Culinary Voyages

Culinary Voyages: a collection of itineraries where every day, onboard and ashore, is shaped by the seasons, and is rooted in regional recipes led by local experts and master chefs. The collection launched with seven sailings across Portugal, Spain, France, and the United Kingdom, timed to Europe's autumn harvest season.

Each sailing in the collection is built around one of four themes:
